White sweet potato
White sweet potato has pale flesh that is often denser and drier than an orange-fleshed variety. It is a sweet potato, not an ordinary potato or a yam.
Caribbean uses
It can accompany Dominican stews boiled or roasted, or become a mash. Its firm texture is useful when a sauce needs a side that will not collapse immediately.
Preparation and storage
Scrub, peel if desired and cut into even pieces. Cook until a knife enters easily; add liquid gradually when mashing a dry variety.

Ingredients
- 600 g White sweet potato — peeled and cut into 2–3 cm pieces
- 15 ml olive oil
- 2 g fine salt
- 1 g dried oregano
Method
- Heat the oven to 200°C / 390°F and line a baking tray.
- Toss the pieces with oil, salt and oregano and spread in one layer.
- Roast for 25–40 minutes, turning once, until browned and easily pierced through the center. Time depends on piece size; serve hot.
