Casabe flour
Here, casabe flour means finely crushed, already-baked cassava flatbread. It is not raw cassava flour or pure tapioca starch, which need different handling.
Caribbean uses
Casabe accompanies soups, beans and mambá in Dominican food. Crushed baked casabe can add crunch to roasted vegetables or serve as a breadcrumb alternative.
Preparation and storage
Check that the product is made from fully prepared baked casabe. Keep dry; do not apply this no-cook use to raw or unidentified cassava products.
Recipe
Casabe flour: crisp vegetable topping
4 small portions
Ingredients
- 40 g Casabe flour — crumbs of already-baked casabe
- 10 ml olive oil
- 1 g dried oregano
- 400 g cooked vegetables, ready to serve
Method
- Warm oil in a pan over medium-low heat.
- Add baked-casabe crumbs and oregano; stir 2–3 minutes until crisp, without burning.
- Scatter over the hot vegetables just before serving so the crumbs stay dry.
At the table
Its dry, light crunch gives a soft vegetable dish a clean contrast.
