Purple sweet potato

Purple sweet potato: oven-roasted wedges

Ingredients
- 600 g Purple sweet potato — peeled and cut into 2–3 cm pieces
- 15 ml olive oil
- 2 g fine salt
- 1 g dried oregano
Method
- Heat the oven to 200°C / 390°F and line a baking tray.
- Toss the pieces with oil, salt and oregano and spread in one layer.
- Roast for 25–40 minutes, turning once, until browned and easily pierced through the center. Time depends on piece size; serve hot.
