Arrowroot
Arrowroot is a starch commonly sold as a fine white powder from maranta rhizomes. It thickens liquid without adding a strong flavor.
Caribbean uses
It can give a fruit sauce or glaze a light, glossy body. For a Caribbean dessert, pineapple or passion fruit provides the flavor while the starch supplies texture.
Preparation and storage
Mix with a little cold liquid before adding to hot liquid. Heat only until thickened; avoid prolonged boiling and follow the product’s instructions.
Recipe
Arrowroot: pineapple sauce
About 300 ml
Ingredients
- 10 g Arrowroot
- 270 ml unsweetened pineapple juice
- 30 ml cold water
Method
- Mix the starch with cold water until completely smooth.
- Warm the pineapple juice in a saucepan. Stir the slurry again and whisk it into the hot juice.
- Stir over gentle heat until translucent and thick enough to coat a spoon, about 1–2 minutes. Remove from heat without prolonged boiling and cool before spooning over fruit.
At the table
It lets the fruit remain the flavor of the sauce rather than adding a floury taste.
