Roasted Tomato Oil
Roasted Tomato Oil: An oil carrying the ingredient’s flavor, usually by a controlled infusion in an existing culinary oil. This does not mean a home cook extracts pure oil simply by roasting the ingredient.
Context
Use ripe tomatoes and separate excess watery juice when a thick result is needed. Roasting concentrates sweetness and savoriness; straining skins and seeds gives a smoother finish.
Example
A menu could use this preparation as a few drops added at service, following safe refrigerated handling. This is an illustrative use, not a standardized recipe.
