Adobo
Adobo is a seasoning mixture applied before cooking. Depending on the culinary tradition, it may be a dry blend or a wet mixture of spices, garlic, salt and acid.
Context
Dominican adobo often draws on garlic, oregano and citrus. It should not be confused with every dish called adobo elsewhere: the name does not specify one universal recipe or amount of acid.
Example
Season chicken with garlic and oregano before cooking, keeping it refrigerated while it marinates. Do not use marinade that contacted raw poultry as an uncooked finishing sauce.
