Roasted Sweet Potato Emulsion
Roasted Sweet Potato Emulsion: A mixture with small droplets of one liquid dispersed in another, commonly oil in a water-based purée. Gradual addition and adequate mixing matter; a blended sauce is not automatically a stable emulsion.
Context
Cook the edible sweet-potato flesh until tender before blending. Varieties differ in moisture; a dry one needs more liquid, while excess water weakens a crisp.
Example
