Roasted Pumpkin Stock
Roasted Pumpkin Stock: A cooking base made by simmering suitable cooked ingredients or clean food-grade trimmings in water, then straining. It is a base for another dish, not necessarily a finished soup.
Context
Use edible pumpkin flesh without tough rind or seeds. Roasting reduces moisture, while a strained stock extracts lighter flavor and will not have the body of a pumpkin purée.
Example
A menu could use this preparation as the cooking liquid for rice. This is an illustrative use, not a standardized recipe.
How THT uses it
At The Hidden Table, this preparation would be adjusted to the guests, the course and the ingredient available, so it contributes a clear purpose and helps make the experience distinctly yours.
