Roasted Pumpkin Gel
Roasted Pumpkin Gel: A flavored liquid or purée set with a suitable gelling ingredient. Acidity, concentration and the chosen gelling agent affect firmness; roasting alone cannot turn an ingredient into a gel.
Context
Use edible pumpkin flesh without tough rind or seeds. Roasting reduces moisture, while a strained stock extracts lighter flavor and will not have the body of a pumpkin purée.
Example
