Roasted Onion Stock
Roasted Onion Stock: A cooking base made by simmering suitable cooked ingredients or clean food-grade trimmings in water, then straining. It is a base for another dish, not necessarily a finished soup.
Context
Use peeled edible onion, not papery skins in a finished purée. Slow browning develops sweetness; blackened material is bitter and is not interchangeable with caramelized onion.
