Roasted Onion Powder

Roasted Onion Powder: A finely ground, thoroughly dried edible ingredient. Roasting alone does not make a powder: the material must be dry enough to grind, and shelf life cannot be inferred from appearance.

Context

Use peeled edible onion, not papery skins in a finished purée. Slow browning develops sweetness; blackened material is bitter and is not interchangeable with caramelized onion.
