Roasted Beans Stock
Roasted Beans Stock: A cooking base made by simmering suitable cooked ingredients or clean food-grade trimmings in water, then straining. It is a base for another dish, not necessarily a finished soup.
Context
Use fully cooked beans, not raw dried legumes. Roasting is a finishing step, and adding vinegar later does not substitute for the initial cooking required by the bean variety.
