Roasted Beans Purée
Roasted Beans Purée: A smooth or lightly textured preparation made by crushing or blending the edible cooked ingredient with enough liquid to move. It should retain body rather than run like broth.
Context
Use fully cooked beans, not raw dried legumes. Roasting is a finishing step, and adding vinegar later does not substitute for the initial cooking required by the bean variety.
Example
A menu could use this preparation as a spooned accompaniment beside vegetables. This is an illustrative use, not a standardized recipe.
How THT uses it
At The Hidden Table, this preparation would be adjusted to the guests, the course and the ingredient available, so it contributes a clear purpose and helps make the experience distinctly yours.
