Grilled Cacao Powder
Grilled Cacao Powder: A finely ground, thoroughly dried edible ingredient. Roasting alone does not make a powder: the material must be dry enough to grind, and shelf life cannot be inferred from appearance.
Context
Use edible roasted nibs or cocoa, not the husk. Cacao brings bitterness and fat; the term “cacao butter” may instead mean extracted cocoa fat, which is a distinct product.
Example
A menu could use this preparation as a measured dry seasoning. This is an illustrative use, not a standardized recipe.
How THT uses it
At The Hidden Table, this preparation would be adjusted to the guests, the course and the ingredient available, so it contributes a clear purpose and helps make the experience distinctly yours.
