Smoked paprika
Smoked paprika is ground dried pepper with a smoke aroma. Sweet and hot versions exist, so the label matters.
Caribbean uses
It is a pantry option for contemporary Caribbean rice, beans, roasted roots and marinades. It adds smoke without requiring a charcoal grill.
Preparation and storage
Keep sealed away from light. Stir into warm oil briefly or add with liquid; it can turn bitter if burned in a very hot dry pan.
Recipe
Smoked paprika: measured salad dressing
About 70 ml
Ingredients
- 1 g Smoked paprika
- 45 ml olive oil
- 20 ml lime juice
- 5 g honey
- 1 g fine salt
Method
- Combine the acid, honey and salt in a small bowl.
- Whisk in the oil and any measured spice until evenly mixed.
- Taste on a piece of cucumber before dressing the salad. Serve immediately; the recipe is not for preserving food.
