Clove
Cloves are dried flower buds with a powerful warm, sweet-spicy aroma. Whole cloves are easier to remove than ground cloves once the desired intensity is reached.
Caribbean uses
They perfume spiced fruit, syrups and sweet Caribbean drinks. A single clove can be enough for a small batch; this is not a spice to measure by a large spoonful.
Preparation and storage
Store sealed and dry. Infuse whole cloves briefly and remove before serving, especially in drinks and desserts.
Recipe
Clove: small fruit-dessert syrup
About 150–250 ml
Ingredients
- 1 Clove — whole clove
- 150 ml water
- 40 g sugar
Method
- Combine water and sugar and bring to a gentle simmer.
- Add the prepared ingredient, simmer gently for 3 minutes, then remove from the heat and steep for 5 minutes.
- Strain out whole spices, zest and fibers. Cool, taste and serve a small spoonful over fruit; refrigerate any remainder promptly.
