Sea salt
Sea salt is crystallized from seawater. Its crystal size changes how quickly it dissolves and how much fits in a spoon; salt by weight for repeatable seasoning.
Caribbean uses
It seasons Caribbean rice, beans, fish and vegetable dishes. Dissolve fine salt in sauces; reserve larger crystals for surfaces where a distinct salty bite is welcome.
Preparation and storage
Keep dry and covered. Taste stocks, cheese and salted fish before adding more salt; their existing seasoning counts toward the dish.

Sea salt: tomato and lime salad

Ingredients
- 400 g ripe tomatoes, sliced
- 15 ml olive oil
- 15 ml lime juice
- 1 g Sea salt
Method
- Arrange tomatoes on a shallow plate.
- Mix oil and lime and spoon over the tomatoes.
- Add the salt immediately before serving; use less if another accompaniment is already salty.
