Flake salt
Flake salt has thin, fragile crystals that crush easily between the fingers. It is primarily a finishing salt rather than a different flavor of salt.
Caribbean uses
On a Caribbean-inspired table, a few flakes can finish grilled vegetables, ripe tomatoes or a chocolate dessert. Add them at service so moisture does not dissolve the texture first.
Preparation and storage
Store in a dry container and handle with dry fingers or a spoon. Do not replace fine salt spoon-for-spoon: weigh or taste instead.

Flake salt: tomato and lime salad

Ingredients
- 400 g ripe tomatoes, sliced
- 15 ml olive oil
- 15 ml lime juice
- 1 g Flake salt
Method
- Arrange tomatoes on a shallow plate.
- Mix oil and lime and spoon over the tomatoes.
- Add the salt immediately before serving; use less if another accompaniment is already salty.
