Coriander seed
Coriander seeds are the dried fruits of the cilantro plant. Their warm, citrus-like aroma differs from the green flavor of its leaves.
Caribbean uses
They can season spice mixes, pickles and marinades. In a contemporary Caribbean sauce, a little crushed seed complements orange, cumin or roasted vegetables.
Preparation and storage
Toast briefly in a dry pan until fragrant, not dark, then crush. Store whole seeds sealed and grind only what you need.

Coriander seed: measured salad dressing
About 70 ml
Ingredients
- 2 g Coriander seed — lightly toasted and finely crushed
- 45 ml olive oil
- 20 ml lime juice
- 5 g honey
- 1 g fine salt
Method
- Combine the acid, honey and salt in a small bowl.
- Whisk in the oil and any measured spice until evenly mixed.
- Taste on a piece of cucumber before dressing the salad. Serve immediately; the recipe is not for preserving food.
