Cocoa butter
Cocoa butter is the pale fat extracted from cacao beans. It contains no milk butter; its aroma depends on whether it has been deodorized.
Caribbean uses
It contributes the melt and structure of chocolate and can enrich a coating or dessert. Use food-grade cocoa butter, not a cosmetic product.
Preparation and storage
Melt gently over warm water without splashing water into the fat. A simple home coating is not a substitute for tempering when a glossy chocolate finish is needed.

Cocoa butter: simple cacao coating

Ingredients
- 20 g Cocoa butter — food grade
- 80 g dark chocolate, chopped
- 240 g ripe banana, peeled and sliced
Method
- Put chocolate and cocoa butter in a dry heatproof bowl above gently steaming water; the bowl must not touch the water.
- Stir gently until melted, then remove from heat and allow to cool slightly.
- Spoon a thin layer over banana and chill until set. Serve as a home-style coating; it has not been tempered for a glossy snap.
