White onion

White onion is an allium with a crisp bulb and a pungent raw flavor that softens and sweetens as it cooks.

Caribbean uses

It is a useful base for sofrito, habichuelas guisadas, rice and meat stews. Cook it gently before adding liquid when you want sweetness rather than raw bite.

Preparation and storage

Store whole bulbs in a dry ventilated place. Refrigerate cut onion in a covered container and use a clean board.

White onion: oven-roasted wedges

Ingredients

  • 600 g White onion — peeled and cut into 2–3 cm pieces
  • 15 ml olive oil
  • 2 g fine salt
  • 1 g dried oregano

Method

  1. Heat the oven to 200°C / 390°F and line a baking tray.
  2. Toss the pieces with oil, salt and oregano and spread in one layer.
  3. Roast for 25–40 minutes, turning once, until browned and easily pierced through the center. Time depends on piece size; serve hot.
