Rose apple
Rose apple, or pomarrosa, has crisp, lightly sweet flesh with a floral aroma. The name refers here to Syzygium jambos, not the ordinary apple or every fruit called a water apple.
Caribbean uses
It is best appreciated fresh when locally available; compotes and light salads are other possibilities. Its perfume suits a restrained fruit course better than a heavily spiced sauce.
Preparation and storage
Wash, cut open and remove the seeds and damaged flesh. Use only sound fruit from a known edible source; chill cut fruit and serve promptly.

- 300 g Rose apple — washed edible flesh, seeds removed
- 150 g cucumber, diced
- 15 ml olive oil
- 15 ml lime juice
- 1 g fine salt
Method

- Whisk oil, lime and salt; fold through gently.
