Roasted corn
Roasted corn may mean grilled sweet-corn kernels or hard toasted dry maize. This page’s recipe uses tender cooked sweet corn, not a crunchy packaged corn snack.
Caribbean uses
Tender kernels can accompany rice, fish or a vegetable salad. Browning them briefly adds a roasted note without turning the whole dish smoky.
Preparation and storage
Drain cooked kernels well before pan-roasting so they brown rather than steam. Hard toasted maize is a different product and will not soften in this quick method.
