Queso blanco
Queso blanco is a broad name for white cheese, not one standardized product. Fresh crumbly cheese and firm frying cheese behave differently when heated.
Caribbean uses
In Dominican meals, queso de freír accompanies mangú, while white cheese also pairs with guava sweets. The recipe below uses pasteurized ready-to-eat cheese and does not assume it can be fried.
Preparation and storage
Check the label for pasteurization, salt level and intended use. Keep refrigerated and follow the use-by date; do not judge safety by smell alone.
Recipe
Queso blanco: small chilled dessert
4 small portions
Ingredients
- 160 g Queso blanco — pasteurized, ready to eat, cubed
- 320 g plain pasteurized yogurt
- 160 g ripe banana, peeled and sliced
Method
- Divide the yogurt among four small bowls.
- Add the prepared main ingredient and banana. Keep hard toppings finely broken and omit them for guests who cannot safely chew them.
- Serve chilled without extra sugar; disclose milk and any peanut ingredients.
At the table
Its mild saltiness is an effective counterpoint to guava’s sweetness.
