Plantain flour
Plantain flour is dried plantain milled into powder. Green-plantain flour is starchy and less sweet than flour made from ripe fruit.
Caribbean uses
It can thicken porridges and contribute to pancakes or baking blends. It does not behave like wheat flour in bread, so do not assume a direct substitution.
Preparation and storage
Use food-grade flour and cook it, rather than stirring raw flour into a finished drink. Whisk into cold liquid first to reduce lumps.

Plantain flour: cooked breakfast porridge
2 small bowls
Ingredients
- 40 g Plantain flour — green-plantain flour
- 400 ml pasteurized milk or unsweetened plant drink
- 10 g sugar
- 0.5 g ground cinnamon
Method
- Whisk the flour into the cold milk until smooth.
- Heat gently, stirring constantly, then simmer 8–10 minutes until thick and fully cooked; follow the flour label if it requires longer.
- Stir in sugar and cinnamon. Add a splash of hot milk if too thick and cool to a comfortable eating temperature.

It gives a breakfast bowl body with a mild plantain flavor.
