Peanut brittle
Peanut brittle is a confection of peanuts held in hardened sugar syrup. Dominican dulce de maní also includes softer styles, so check the texture before using it as a garnish.
Caribbean uses
It is eaten as a sweet and can be broken into a crisp topping for a small fruit or yogurt dessert. Use the finished candy rather than treating it as raw peanuts.
Preparation and storage
Store dry and airtight. Break into small pieces with care; hard candy is unsuitable for anyone who has difficulty chewing or swallowing. Contains peanuts.
Recipe
Peanut brittle: small chilled dessert
4 small portions
Ingredients
- 40 g Peanut brittle — ready-to-eat candy, finely broken
- 320 g plain pasteurized yogurt
- 160 g ripe banana, peeled and sliced
Method
- Divide the yogurt among four small bowls.
- Add the prepared main ingredient and banana. Keep hard toppings finely broken and omit them for guests who cannot safely chew them.
- Serve chilled without extra sugar; disclose milk and any peanut ingredients.
