Honey

Honey is a bee-produced sweetener whose aroma varies with floral source. It is sweeter and more fluid than dry sugar, so substitutions affect both sweetness and moisture.

Caribbean uses

It can sweeten fruit, dressings and drinks. With lime, a small amount rounds acidity; it need not make a savory sauce taste like dessert.

Preparation and storage

Keep covered and use a clean spoon. Do not give honey to children under 12 months, including as an ingredient.

Recipe

Honey: measured salad dressing

About 70 ml

Ingredients

  • 10 g Honey
  • 45 ml olive oil
  • 20 ml lime juice
  • 1 g fine salt

Method

  1. Combine the acid, honey and salt in a small bowl.
  2. Whisk in the oil and any measured spice until evenly mixed.
  3. Taste on a piece of cucumber before dressing the salad. Serve immediately; the recipe is not for preserving food.
