Quick stewed Chickpeas

Ingredients

  • 500 g cooked or canned Chickpeas, drained
  • 120 g diced tomato
  • 60 g sofrito
  • 250 ml water or unsalted stock
  • 15 ml oil

Method

  1. Use fully cooked Chickpeas; if canned, drain and rinse.
  2. Warm the oil and sofrito for 2 minutes.
  3. Add tomato, the cooked ingredient and liquid; simmer for 12 minutes.
  4. Taste, adjust the seasoning and serve hot.
