Caimito
Caimito, or star apple, has soft sweet flesh beneath a purple or green skin. The cut fruit often shows a star-like seed pattern; it is not the same fruit as abiu.
Caribbean uses
It is generally appreciated ripe and fresh. Spoon the flesh into a chilled fruit course or serve beside plain yogurt rather than hiding its delicate flavor in a strong sauce.
Preparation and storage
Use ripe fruit, cut open and scoop out the flesh without scraping the bitter skin. Remove seeds and avoid the latex-rich peel.

Caimito: small chilled dessert

Ingredients
- 240 g Caimito — ripe flesh, skin and seeds removed
- 320 g plain pasteurized yogurt
- 160 g ripe banana, peeled and sliced
Method
- Divide the yogurt among four small bowls.
- Add the prepared main ingredient and banana. Keep hard toppings finely broken and omit them for guests who cannot safely chew them.
- Serve chilled without extra sugar; disclose milk and any peanut ingredients.
