Cabbage
Cabbage forms dense layers of leaves with a peppery crunch when raw. Heat softens the leaves; prolonged cooking can make their sulfur aroma dominate.
Caribbean uses

Preparation and storage

- 300 g Cabbage — washed, cored and finely shredded
- 150 g cucumber, diced
- 15 ml olive oil
- 15 ml lime juice
- 1 g fine salt
Method
- Put the prepared main ingredient and cucumber in a clean bowl.
- Whisk oil, lime and salt; fold through gently.
- Taste and serve promptly for the freshest texture. Refrigerate if not serving immediately.
