Citrus-herb Beef

Ingredients

  • 600 g Beef, cleaned and ready to cook
  • 30 ml lime or bitter-orange juice
  • 15 ml olive or coconut oil
  • 10 g chopped fresh herbs
  • 3 g fine salt

Method

  1. Keep Beef refrigerated and separate from ready-to-eat food.
  2. Mix the citrus, oil, herbs and salt; coat the ingredient just before cooking.
  3. Cook until the thickest part reaches 63°C / 145°F with a 3-minute rest for whole cuts; 71°C / 160°F for ground meat, measured with a food thermometer.
  4. Rest if required, portion with clean utensils and serve promptly.
