Banana
A ripe dessert banana has sweet, soft flesh and a yellow peel that may develop brown speckles. It is not the same cooking ingredient as a firm green plantain.
Caribbean uses
In Caribbean kitchens it is eaten fresh, blended into drinks or used in cakes and simple desserts. A lightly browned banana pairs well with cacao and coconut.
Preparation and storage
Let firm bananas ripen at room temperature. Peel just before use; freeze peeled pieces for later blending.
