Roasted Lime Oil
Roasted Lime Oil: An oil carrying the ingredient’s flavor, usually by a controlled infusion in an existing culinary oil. This does not mean a home cook extracts pure oil simply by roasting the ingredient.
Context
Separate juice, colored zest and white pith according to the preparation. Zest carries aroma, juice provides acidity, and too much pith or aggressive charring brings bitterness.
Example
A menu could use this preparation as a few drops added at service, following safe refrigerated handling. This is an illustrative use, not a standardized recipe.
