Roasted Guava Vinaigrette
Roasted Guava Vinaigrette: A dressing combining an acidic liquid, oil and the prepared ingredient. Whisking disperses the oil temporarily; separation is normal unless another ingredient stabilizes the mixture.
Context
Use ripe guava flesh or prepared pulp and remove its hard seeds when smooth texture is required. Sweetened guava paste is a different starting ingredient from fresh fruit.
Example
A menu could use this preparation to dress a salad just before serving. This is an illustrative use, not a standardized recipe.
How THT uses it
At The Hidden Table, this preparation would be adjusted to the guests, the course and the ingredient available, so it contributes a clear purpose and helps make the experience distinctly yours.
