Roasted Chile Emulsion

Roasted Chile Emulsion: A mixture with small droplets of one liquid dispersed in another, commonly oil in a water-based purée. Gradual addition and adequate mixing matter; a blended sauce is not automatically a stable emulsion.

Context

Identify the pepper and its heat level; sweet ají and hot chile are not interchangeable. Avoid inhaling ground hot pepper and offer guests a clear indication of heat.
