Roasted Avocado Oil

Roasted Avocado Oil: An oil carrying the ingredient’s flavor, usually by a controlled infusion in an existing culinary oil. This does not mean a home cook extracts pure oil simply by roasting the ingredient.

Context

Use sound ripe flesh without skin or stone. Gentle, brief heating preserves more of its character; prolonged roasting can produce bitterness, and exposed purée browns readily.
